Kale, Celery, Dates, Apples, Feta, Maple: This Is A Healthy Salad For You

  1. Place the baby kale in a wide serving bowl or platter.
  2. Cut the dates, lengthwise, into very thin strips, and place in a small separate bowl.
  3. Peel the celery and cut in half lengthwise.
  4. With your knife at a diagonal angle, cut very thin, 1 to 2-inch pieces of celery.
  5. Add to the dates.
  6. Slice the sides off the apple and cut those pieces into very thin slices.
  7. Squeeze lemon juice over the apple slices, to keep them from browning.
  8. Make the dressing: In a small bowl, whisk together the vinegar, maple syrup and olive oil.
  9. Season with two pinches of salt and a few grinds of pepper.
  10. Just before serving, pour most of the dressing over the salad and toss to combine; pour the rest over the celery and dates.
  11. Top with the date mixture, apple slices, walnuts and feta cheese.
