Emeril's Late Night Parfait

  1. Remove the ice cream from the freezer to soften slightly, about 5 minutes at room temperature.
  2. Into the bottom of 4 footed parfait or ice cream glasses, scoop about 2 tablespoons of the vanilla ice cream.
  3. Top with about 1/2 tablespoon of the cookie crumbs and drizzle lightly with 1 1/2 teaspoons of the liqueur.
  4. Continue layering the ingredients, ending with liqueur on top.
  5. Place the glasses in the freezer for the ice cream to harden, about 1 hour.
  6. To serve, sprinkle the top of each parfait glass with nuts and serve.
