Salmon With Mango Cilantro Salsa
- 1 (2 lb) packagefrozen seasoned salmon
- 3 ripe mangoes
- 1 bunch cilantro
- 2 limes
- 4 garlic cloves
- 1 onion
- 1 (8 ounce) bag brown rice
- Place your salmon skin side down on the grill ( you can use aluminum foil to keep it from falling through depending on size).
- First slice all of your mangoes into a bowl, you are just getting them off of the seed.
- Chop your onion and rinse the cilantro.
- Put about 1/3 of those into the food processor and add the juice from your limes, the garlic cloves minced, and the cilantro.
- Let it go until it is almost liquid.
- Add the chopped onion to this mix in a bowl.
- When the salmon is close to finished spoon your desired amount of the cilantro onto the tops of the filets (I used about 1/3 of my mix).
- Place the rest of your mangoes in an aluminum foil bundle with the rest of the cilantro mix on the grill to heat them.
- Serve with rice.
