Alaska Cod, Orzo And Cucumber Salad Recipe

  1. Mix the blue cheese salad dressing with the lemon zest and lemon juice; hold aside.
  2. Broil or possibly saute/fry the cod fillets, turning 1 time till cooked through.
  3. Fish should be opaque but barely translucent/soft in the center.
  4. Cooking time will vary depending on cooking method and thickness of fish, but should take between 4 to 8 min.
  5. Set aside to cold.
  6. Bring 4 c. of salted water to a boil, add in the orzo and cook to al dente (about 8 to 10 min).
  7. Cold by running under cool water.
  8. Drain well and set aside.
  9. Flake the cooled cod fillets.
  10. Place cod flakes, cucumber slices and orzo in a mixing bowl.
  11. Add in the dressing mix and green onion slices; mix well.
  12. Taste, adding salt and pepper as necessary.
  13. Place 2 lettuce leaves each on 4 chilled plates.
  14. Divide the salad among the 4 plates.
  15. Garnish with 1 tsp.
  16. of red bell pepper and 1 lemon wedge; serve.
  17. This recipe yields 4 servings.
