Balsamic Orange Glazed Salmon

  1. Heat the olive oil in a non-stick skillet.
  2. Saute the peppers and shallot for a couple of minutes on medium heat.
  3. Squeeze the oranges and add the juice and balsamic vinegar to the skillet.
  4. Cook for a few minutes more until the juice begins to simmer.
  5. Add the salmon, cover and cook for 8-10 minutes.
  6. Uncover and check fish for doneness.
  7. The juices should be reduced to a glaze.
  8. Transfer the fish to dinner plates and top with the peppers and shallot glaze.
  9. Serve with brown rice and a fresh green vegetable.
