Crushed Cucumber in Chinese-Style Marinade
- 3 Cucumbers
- 1 tsp Salt
- 1 bit less than 1/2 teaspoon Doubanjiang
- 1 tbsp Sugar
- 2 tbsp Vinegar
- 1 tbsp Soy sauce
- 1 tsp Sesame oil
- 1 Ra-yu
- Sprinkle the cucumbers with a little salt and roll on a cutting board.
- Bash with a rolling pin to make cracks.
- Break into small pieces with your hands.
- Sprinkle with more salt, rub, and leave for 20-30 minute.
- Squeeze out the water.
- Put the cucumber pieces in a plastic bag with the ingredients (adjusted to taste), and rub over the bag.
- When the seasoning ingredients are well distributed, add the ingredients and rub again.
- Rest for several hours.
- The flavors will soak into the cucumber and it'll be delicious.
