Broccoli And Cheese Tofu Potatoes Recipe
- 4 x baked potatoes
- 12 ounce hard tofu, pressed
- 2 ounce cheese, grated or possibly diced
- 1/2 c. finely minced broccoli
- 1/2 tsp salt pepper to taste
- 1 1/2 Tbsp. butter
- 1 x onion, chopped
- 1 Tbsp. oil lowfat sour cream Preheat oven to 350 degrees.
- Cut baked potatoes lengthwise and scoop out potato, leaving the shells.
- Mash together in a bowl the scooped out potato, tofu, and cheese.
- Fold in the broccoli, and season with salt and pepper.
- Heat butter in a skillet and saute/fry onion till nicely browned.
- Mix onion into potato tofu mix, then divide mix among potato shells.
- Coat a cookie sheet with the oil and bake stuffed potatoes about 30 min or possibly till browned.
- Serve with lowfat sour cream and/or possibly butter.
