Omelette with Spring Colours
- 2 Eggs
- 10 Edamame
- 5 cm Fish sausage (Ham or bacon is OK)
- 3 slice Sliced cheese
- 1 Salt and pepper
- Remove the edamame from the pods.
- Slice the sausage and cheese into fairly large pieces.
- Break and beat the egg, then season with salt and pepper.
- Pour a batch of the egg mixture into a pan and cook on a low heat.
- Evenly line up the edamame, sausage and cheese.
- Roll it as if you were making a normal omelette.
- Pour in the next batch and repeat step 3.
- When it has cooked, allow it to cool on a rack.
- If your bento box is small, reduce the amount of filling.
