Baked Parmesan Chicken Tenders

  1. Preheat oven to 400 degrees F. Spray cookie sheet with nonstick olive oil spray.
  2. Set aside.
  3. In a bowl, whisk egg whites and salt and pepper.
  4. In a separate bowl, combine whole wheat seasoned Italian breadcrumbs and Parmesan cheese.
  5. Coat chicken tenderloins with the egg white mixture.
  6. Then dredge in the breadcrumbs.
  7. Place breaded chicken on the seasoned cookie sheet.
  8. Continue until all chicken is breaded and on the cookie sheet.
  9. Spray the top of breaded chicken with olive oil spray.
  10. For not so crispy tops, just cook for aboout 20 minutes; If you want to have crispy chicken tenders on both sides, after about 15 minutes, turn the chicken tenderloins over and cook for about another 5 minutes to crisp both sides!
  11. Serve with honey mustard sauce and enjoy!
