Western Ranch Meat Loaf Recipe
- 10 lbs. grnd beef
- 2 1/2 c. onions, minced
- 2 c. green pepper, minced
- 1 lg. bunch celery, minced
- 1 1/4 c. fat
- 3 1/2 tbsp. salt
- 10 med. Large eggs
- 3 quarts. bread crumbs
- 2 1/2 c. water
- 2 1/2 c. tomato sauce
- 1/4 pound butter
- Pan fry onions, green pepper and celery in fat.
- Combine with salt, Large eggs, bread crumbs and water to make a stuffing, beat till thoroughly moistened.
- Add in 1/2 of stuffing to meat.
- Pat out meat mix in bottom of loaf pans.
- Top with remaining mix.
- Bake in a moderate oven at 350 degrees for 1 1/2 hrs.
- Brush top with mix of tomato juice, mixed with melted butter to keep loaves moist.
- Serves 50.
