Bhaja Recipe

  1. Combine flour, soda, spices in a bowl & slowly add in about 1 c water.
  2. The batter should be thin.
  3. Add in poppy seeds to batter just before you are ready to use it & fold in.
  4. Pour sufficient oil in a wok to come to 2" depth.
  5. Heat over a lowish heat.
  6. dip vegetables into batter & fry in single layer in the wok.
  7. Fry, stiring occasionally, for about 7 min or possibly so.
  8. They should be golden brown on both sides & cooked through.
  9. Remove with a slotted spoon & drain well on paper towels.
  10. Do all vegetables this way.
  11. Serve with beer.
