Shoofly Pie

  1. In a bowl combine flour and sugar.
  2. Cut in butter into the flour and sugar until mixture resembles crumbs.
  3. Remove 1/2 cup of the crumb mixture and set aside
  4. To larger part of crumb mixture add egg and molasses.
  5. Blend in 3/4 cup boiling water.
  6. Dissolve soda in remaining 1/4 cup water and add last.
  7. Pour into pie shell.
  8. Sprinkle with 1/4 cup reserved crumbs.
  9. Bake at 425 degrees for 15 minutes.
  10. Add remaining crumbs and bake 40-45 minutes.
  11. Garnish with whipped cream
