Roast Beef and Tomato Salad
- 800g potatoes, cut into small chunks Safeway 2 pkg For $5.00 thru 02/09
- olive oil spray
- 250g green beans, steamed until tender
- 1 punnet cherry tomatoes, halved
- 200g thinly sliced roast beef, cut into strips
- 1/2 small red onion, thinly sliced
- Dressing
- 1/3 cup KRAFT Classic Mayonnaise
- 2 teaspoons lemon juice
- 1 teaspoon seeded mustard
- 1 teaspoon finely grated lemon rind
- Place potatoes on a lined baking tray, spray with oil and bake at 200C for 35-40 minutes until golden and tender.
- Combine dressing ingredients together in a small bowl.
- Toss together the potatoes, beans, tomatoes, roast beef and onion.
- Serve drizzled with dressing.
