Strawberry Jelly Muffins
- 2 1/2 cup all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup sugar
- 1 1/4 cup milk
- 2/3 cup strawberry yogurt
- 1 egg
- 1/4 cup melted butter
- 1 1/2 tsp vanilla
- 1/2 cup strawberry jelly
- Preheat oven 375
- line muffins tin with paper liners
- in a large bowl stir together flour, baking powder, baking soda, and sugar together
- in another bowl cream together sugar, melted butter, milk, vanilla, egg and yogurt
- pour milk mixture over flour mixture, stir just till combined
- spoon batter into muffins cups till half full
- add 1/2 teaspoon jelly to the centre of each muffin
- spoon the remaining batter over each to cover jelly
- bake 25-30 min or until tops are firm to the touch
- let cool 5 min, then spread remaining jelly thinly over the tops of muffins, cool completely
