Lobster Fra Diavolo Recipe

  1. Plunge lobsters into large pot of boiling water and cook one minute to kill them.
  2. Remove from water and split lengthwise.
  3. Heat the oil in a large skillet, add in lobsters and cook gently for about 10 min.
  4. Add in the seasonings, herbs and tomatoes.
  5. Cover and cook an additional ten min, stirring often.
  6. Arrange a ring of cooked rice on a large serving platter.
  7. Put the lobster halves in the center and pour the sauce over them.
  8. Add in the brandy and blaze just before serving.
  9. Serves 4.
