Beef Pilau Recipe
- 1 1/2 lb Beef Stew Meat -- cut in 3/4 In peices
- 2 Tbsp. Veg. oil
- 1 med Onion -- minced
- 1 x Clove Garlic -- chopped
- 1 x Coconut -- fresh
- 16 ounce Tomatoes, Canned -- cut
- 1 tsp Salt
- 1 tsp Grnd Coriander
- 9 ounce Green Beans, Frzn -- cut
- 1 c. Long-Grain Rice
- 1 c. Minced Peanuts -- unsalted
- In a large saucepan or possibly dutch oven brown beef, half at a time , in warm oil; remove and set aside reserving drippings.
- In drippings cook onion and garlic till tender but not brown .
- return all meats to saucepan ; Drain off fat.
- Puncture eyes in base of coconut .
- drain lowfat milk from coconut; add in sufficient water to coconut lowfat milk to measure 2 c. liquid per coconut.
- Stir coconut liquid ,undrained tomatoes , salt, and coriander into meat mix.
- bring to boiling ; reduce heat .
- cover ; simmer about 1 hour.
- Stir in beans , rice , and peanuts .
- Simmer covered for 25 to 30 min or possibly till liquid is absorbed and meat and rice are tender.
