Fried Leeks

  1. In a medium sauce pot heat oil to 350 degrees F.
  2. Clean and julienne leeks.
  3. Sift cornstarch and flour together.
  4. Dust leeks in flour/cornstarch and fry until golden brown, about 30 seconds.
  5. Drain on a paper towel, season with salt.
  6. See Cook's Note.
  7. Cook's Note: Be sure to stay close when frying leeks because they will burn quickly.
