Cottage Cheese Cookies
- 1 cup butter, softened
- 1 cup cream-style small curd cottage cheese
- 2 cups flour
- strawberry preserves
- Cream together butter and cottage cheese.
- Work in the flour and wrap dough in waxed paper.
- Place in the refrigerator to harden.
- When cold, roll in thin sheets and cut three inch squares.
- Place a teaspoon of strawberry preserves in the center of each square and fold into a triangle, pressing edges together very firmly.
- Bake at 425 F for 15 minutes, or until crust is brown and crisp.
