Quick Pork Fried Rice

  1. In a small bowl, beat eggs.
  2. Set aside.
  3. In a medium skillet, melt butter over medium heat.
  4. Add eggs and scramble until set and no longer runny.
  5. Remove from heat and chop.
  6. In a large skillet or wok, heat oil over medium-high heat.
  7. Add pork and cook, crumbling, until it just starts to brown.
  8. Add onion and carrots and saute, tossing frequently, until carrots are fork-tender.
  9. Drain peas and add to pork and veggie mixture.
  10. Add rice, soy sauce, oyster sauce, and garlic, stirring to combine.
  11. Continue to cook and stir well until heated through.
