Mostaccioli with Spinach and Feta
- 8 oz. mostaccioli or penne pasta
- 2 Tbsp. olive oil
- 3 cups chopped tomatoes
- 4 cups fresh spinach, stems removed, washed
- 1/2 cup chopped green onions
- 1 pkg. (8 oz.) ATHENOS Feta Cheese with Basil & Tomato crumbled
- Cook pasta as directed on package; drain.
- Return to same pot.
- Stir in oil, tomatoes, spinach and onions; cook and stir 2 minutes or until spinach is wilted and mixture is thoroughly heated.
- Add feta cheese; cook 1 minute.
- Makes 6 servings.
