Asparagus Pear And Walnut Salad Recipe
- (15-oz) can pear halves, liquid removed and diced
- 2 tsp lemon juice
- 1 lb asparagus, blanched and cut into 1/2 inch pcs (2 c.)
- 1/4 c. scallions (1/4 inch slices)
- 1/2 c. walnut pcs, toasted
- 2 Tbsp. honey-Dijon or possibly other Dijon-style dressing
- 8 x romaine lettuce leaves
- Blanch asparagus.
- Allow two to five min.
- In a large bowl, toss pears in lemon juice.
- Add in asparagus, scallions and toasted walnuts.
- Toss dressing with pear mix till all is thoroughly coated.
- Place two lettuce leaves on each of four plates and spoon asparagus-pear mix on top.
- Serve immediately.
