Texas Potato Holiday Cake Recipe
- 2 c. sugar
- 1 c. butter
- 2 1/2 c. flour
- 1 c. minced pecans
- 1 c. white raisins
- 1 c. minced dates
- 1/2 c. cocoa
- 1 tbsp. cloves
- 1 tbsp. cinnamon
- 1 tbsp. allspice
- 1 c. buttermilk
- 1 level teaspoon soda
- 3 Large eggs
- 1 c. cooked, unsalted mashed potatoes
- Cream sugar and butter.
- Mix flour, nuts, raisins, dates, cocoa and spices.
- Bet sure fruit is well coated.
- Dissolve soda in buttermilk thoroughly.
- Add in dry ingredients alternately with buttermilk to creamed mix.
- Add in Large eggs one at a time, beating after each addition.
- Add in potatoes.
- This makes a heavy batter.
- Spoon batter into a greased and floured 10 inch tube pan.
- Bake at 375 degrees for 1 hour and 45 min.
- Cake may cold in pan or possibly on a wire rack.
