Tomato Salad with Ginger

  1. Core the tomatoes, then slice them.
  2. Arrange them on a plate and sprinkle with salt and pepper; let sit for about 10 minutes.
  3. Meanwhile, combine the ginger with some more salt and pepper, the chile, and about 3 tablespoons lime juice.
  4. Drain any liquid that has accumulated around the tomatoes, then dress with the ginger-lime mixture.
  5. Taste and add more lime juice if necessary, then garnish and serve.
