Garlic and Herb Dip with Hard-Boiled Eggs
- 4 ounces goat cheese
- 3/4 cup sour cream
- 3 hard-boiled eggs, peeled
- 2 tablespoons minced fresh chives
- 2 teaspoons minced fresh cilantro
- 2 teaspoons minced fresh dill
- 1 lemon, zested and juiced
- Salt and freshly ground black pepper
- Spring vegetables, for serving
- Combine the goat cheese and sour cream, and whisk until smooth.
- Finely mince the hard-boiled eggs or push through a strainer or French tamis until finely chopped, and add to the cheese mixture.
- Add the chives, cilantro, dill, lemon zest and juice.
- Stir to incorporate.
- Season with salt and pepper, and serve with spring vegetable crudite.
