Apricot Macaroon Pudding Recipe
- 1 c. Dry APRICOTS
- 2 Tbsp. SUGAR
- 1 x 4-SERVING ENVELOPE LOW-CALORIE VANILLA PUDDING MIX
- 1 1/2 c. RECONSTITUTED NONFAT DRY Lowfat milk
- 2/3 c. COARSE DRY BREAD CRUMBS
- 2 Tbsp. FLAKED COCONUT, TOASTED
- COOK APRICOTS USING PACKAGE DIRECTIONS; STIR IN SUGAR.
- Cold AND DRAIN, RESERVING 1/2 C. SYRUP.
- DICE APRICOTS.
- COMBINE PUDDING MIX,Lowfat milk AND RESERVED SYRUP IN SAUCEPAN; COOK AND STIR Until THICK AND BUBBLY.
- Cold SLIGHTLY.
- Add in CRUMBS AND APRICOTS TO PUDDING Mix; MIX WELL.
- SPOON INTO SHERBET DISHES; SPRINKLE EACH WITH 1 Tsp.
- COCONUT.
- SERVES 6
