Apricot Macaroon Pudding Recipe

  1. COOK APRICOTS USING PACKAGE DIRECTIONS; STIR IN SUGAR.
  2. Cold AND DRAIN, RESERVING 1/2 C. SYRUP.
  3. DICE APRICOTS.
  4. COMBINE PUDDING MIX,Lowfat milk AND RESERVED SYRUP IN SAUCEPAN; COOK AND STIR Until THICK AND BUBBLY.
  5. Cold SLIGHTLY.
  6. Add in CRUMBS AND APRICOTS TO PUDDING Mix; MIX WELL.
  7. SPOON INTO SHERBET DISHES; SPRINKLE EACH WITH 1 Tsp.
  8. COCONUT.
  9. SERVES 6
