Holiday Pecan Logs
- 2 tsp. plus 1/2 cup butter, no substitutes, softened and divided
- 3 3/4 cups powdered sugar
- 1/2 cup instant non-fat dry milk powder
- 1/2 cup sugar
- 1/2 light corn syrup
- 1 tsp. vanilla
- 1 pkg. caramels (14 oz.)
- 1 Tbsp. milk or cream
- 2 cups chopped pecans
- Butter an 8 inch square pan with 2 tsp. butter, set aside. Combine powdered sugar and dry milk, set aside.
- In a heavy saucepan combine 1/2 cup butter, sugar and corn syrup; cook and stir until it comes to a boil and sugar is dissolved.
- Stir in powdered sugar, about 1/3 at a time until blended.
- Remove from heat and stir in vanilla.
- Continue stirring until mixture thickens and mounds slightly when dropped from a spoon.
- Spread into prepared pan.
- Cool.
- Cut candy into four strips.
- Cut each strip in half.
- Shape each strip into a log shape.
- Wrap in waxed paper, twist the ends.
- Freeze or refrigerate until firm.
- In heavy saucepan or microwave melt caramels with milk.
- Stir often. Roll logs in caramel mixture then in pecans.
- Wrap in waxed paper. Store at room temperature in airtight containers.
- Cut into slices with serrated knife.
