Hearty Lentil Soup (Bss)
- 1 cup lentils
- 12 cup red onion
- 14 cup poblano pepper
- 14 cup carrot
- 12 cup celery
- 1 garlic clove
- 1 tablespoon olive oil
- 2 12 cups vegetable broth
- 12 teaspoon fresh rosemary
- 12 teaspoon fresh oregano
- 12 teaspoon fresh parsley
- 18 teaspoon cayenne pepper
- 12 teaspoon sea salt
- Drain white beans, rinse, and dry.
- Mince garlic.
- Dice onions, carrots, and celery.
- In a stock pot, heat oil over low to medium heat.
- Saute onions for 23 minutes.
- Add carrots, celery, and garlic.
- Saute for an additional 45 minutes or until vegetables start to become soft.
- Add vegetable broth, beans, and all herbs and spices.
- Simmer covered for 2030 minutes stirring occasionally.
- Remove from heat and serve or chill for later.
