Vickys Ruby Poached Pears in Syrup
- 4 firm, peeled pears
- 750 ml red grape juice
- 60 grams caster sugar
- 1/4 tsp mixed spice / pumpkin pie spice
- 1 zest of 1/2 an orange
- 1/2 tsp vanilla extract or paste
- Put the grape juice in a small but deep pan with the sugar, mixed spice, vanilla & orange zest and heat gently until the sugar dissolves
- Put the pears in the pan.
- They should be covered by the juice.
- Bring to the boil then simmer for 25 mins or until soft
- Put the pears to the side and keep warm.
- Bring the juice to a rapid boil until it has reduced by half and turned syrupy
- Serve the pears hot or cold with the syrup poured over.
- I serve vanilla ice cream on the side and hubby likes custard with his.
