Stir-Fried Garlic Lettuce

  1. break in half (and half again if pieces are very large).
  2. Separate into leaves.
  3. Wash in several changes of cold water.
  4. Drain thoroughly in colander until dry to the touch; set aside.
  5. In small bowl, mix together soy sauce, sesame oil, rice wine, sugar and pepper.
  6. Heat 14-inch flat-bottomed wok or skillet over high heat until hot but not smoking.
  7. Add vegetable oil and garlic and stir-fry 10 seconds.
  8. Add lettuce and stir-fry 1 minute.
  9. Add salt and stir-fry until lettuce is just wilted, about 1 minute.
  10. Add soy sauce mixture and stir-fry until lettuce is just tender but still bright green, 30 seconds to 1 minute more.
  11. Serve at once.

head iceberg lettuce, soy sauce, dark sesame oil, rice cooking wine, sugar, ground white pepper, vegetable oil, garlic, salt
