Finnish Chestnut Fingers

  1. Cream butter or margarine and the 1/4 cup sugar thoroughly. Add egg yolk; beat until light and fluffy.
  2. Beat in chestnut puree and vanilla.
  3. Stir flour, salt and cinnamon together thoroughly; stir into creamed mixture.
  4. Roll into 2 1/2-inch long fingers, using a scant tablespoon dough for each finger.
  5. Dip one side of each finger in slightly beaten egg white, then in sugar.
  6. Place, sugar side up, on greased cookie sheet.
  7. Bake at 350u0b0 until lightly browned, about 20 minutes.
  8. Remove from cookie sheet while hot.
  9. Cool on wire rack.
  10. Dip one end of each cookie in melted chocolate.
  11. Place on waxed paper until chocolate hardens.
  12. Makes 30 cookies.
