Finnish Chestnut Fingers
- 6 Tbsp. butter or margarine
- 1/4 c. sugar
- 1 egg yolk
- 1/2 c. chestnut puree or canned chestnuts, drained and pureed
- 1/4 tsp. vanilla
- 1 c. all-purpose flour
- 1/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 1 slightly beaten egg white
- sugar
- 1/2 c. semi-sweet chocolate pieces, melted
- Cream butter or margarine and the 1/4 cup sugar thoroughly. Add egg yolk; beat until light and fluffy.
- Beat in chestnut puree and vanilla.
- Stir flour, salt and cinnamon together thoroughly; stir into creamed mixture.
- Roll into 2 1/2-inch long fingers, using a scant tablespoon dough for each finger.
- Dip one side of each finger in slightly beaten egg white, then in sugar.
- Place, sugar side up, on greased cookie sheet.
- Bake at 350u0b0 until lightly browned, about 20 minutes.
- Remove from cookie sheet while hot.
- Cool on wire rack.
- Dip one end of each cookie in melted chocolate.
- Place on waxed paper until chocolate hardens.
- Makes 30 cookies.
