Mom's Green Dressing

  1. In a blender puree watercress, parsley, shallot, green pepper, capers, chives and tarragon.
  2. With motor running add the 2 tsp.
  3. wine vinegar and pour in the 3 Tbsp.
  4. olive oil in a slow stream.
  5. Transfer the dressing to a small bowl and add salt and pepper to taste.
  6. Cool.
  7. Pour over mixed green lettuce.
