Light Lime Bars
- 3 tablespoons softened butter
- 3 tablespoons light cream cheese or 3 tablespoons fat free cream cheese
- 12 cup granulated sugar
- 1 large egg yolk
- 34 cup flour
- 2 tablespoons powdered sugar
- 1 large egg
- 14 cup egg substitute
- 1 cup granulated sugar
- 2 tablespoons unbleached flour
- 13 cup lime juice or 13 cup key lime juice
- 2 tablespoons powdered sugar
- Heat oven to 350F.
- For crust, beat the butter, cream cheese and 1/2 C granulated sugar with electric mixer in medium bowl until light and fluffy.
- Beat in the egg yolk; gradually add the 3/4 C flour.
- Spread into a greased 8-inch square baking dish.
- Sprinkle 2 T powdered sugar on top of the dough so it won't stick to the palm of your hands as you pat it down to make a crust.
- Bake 20 minutes.
- For filling: beat the egg and egg substitute slightly in mixing bowl.
- Add 1 cup granulated sugar and 2 T flour; beat on low speed until blended.
- Add the lime juice; beat on low until blended.
- Pour onto warm shortbread crust; bake 15 minutes more.
- Place on rack to cool.
- Sprinkle top with 2 T or more of powdered sugar.
