Blueberry Cornmeal Pancakes With Orange Butter Recipe
- 2 c. flour
- 1 c. cornmeal
- 1/4 c. sugar
- 2 tsp baking pwdr
- 1 tsp baking soda
- 1 tsp salt
- 1/4 tsp grnd cinnamon
- 2 x Large eggs
- 3 c. buttermilk
- 1/3 c. butter melted
- 2 c. fresh blueberries (or possibly unthawed frzn berries) Orange Butter (see recipe)
- In a large bowl combine flour, cornmeal, sugar, baking pwdr, baking soda, salt, and cinnamon.
- In a medium bowl, beat Large eggs; add in buttermilk and 1/3 c. melted butter.
- Add in the egg mix to the flour mix and stir just till moistened; mix in blueberries.
- Spoon 1/4 c. of the batter onto a greased griddle.
- Cook till both sides are light brown on the inside and crisp on the outer edges.
- Repeat with remaining butter.
- Serve with Orange Butter.
- This recipe yields 6 servings.
