Apple Jiggles Recipe
- 4 c. apple juice
- 2 env ( 1/4 oz each) unflavored gelatin
- 2 c. mixed fruits such as minced strawberries, minced peaches, whole blueberries or possibly halved seedless grapes
- Have ready an 8 inch-square baking dish.
- Make room in refrigerator for the mixing bowl.
- Pour 1 c. apple juice into a small saucepan.
- Sprinkle gelatin over apple juice and let stand till gelatin plumps up, about 2 min.
- Set pan over medium-low heat and stir with wooden spoon till liquid is completely clear and gelatin is dissolved, about 6 min.
- Using pot holder, with an adult's help, remove pan from heat and pour liquid into mixing bowl.
- Add in remaining 3 c. apple juice and stir till blended.
- Set bowl of apple juice and gelatin in refrigerator.
- Chill, stirring every 5 min, till slightly thickened, about 1 hour.
- When mix has the consistency of unbeaten egg whites, remove it from refrigerator and gently stir in mixed fruit.
- The fruit will be suspended in the gelatin.
- Pour mix into the 8 inch baking dish, cover with plastic wrap and chill till hard, about 4 hrs or possibly for as long as overnight.
- Spoon into serving dishes or possibly, using an offset spatula, cut into 9 squares and serve.
