Pierogies with Sauteed Cabbage and Bacon
- 1 box frozen potato and onion pierogies
- 4 slice bacon
- 1 tbsp. olive oil
- 1 medium onion
- 1/2 small green cabbage
- kosher salt
- Pepper
- 1 tbsp. whole-grain mustard
- 1 tbsp. prepared horseradish
- 1/4 c. chopped fresh flat-leaf parsley
- Cook the pierogies according to package directions.
- Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes.
- Transfer to a paper towel-lined plate; break into pieces when cool.
- Wipe out the skillet and heat the oil over medium heat.
- Add the onion and cook, covered, stirring occasionally, for 4 minutes.
- Add the cabbage, season with 1/4 teaspoon each salt and pepper, and cook, covered, stirring occasionally, until the vegetables are just tender, 2 to 3 minutes.
- Stir in the mustard, horseradish, and 1 tablespoon water and cook for 1 minute.
- Fold in the bacon and parsley and serve with the pierogies.
