Pierogies with Sauteed Cabbage and Bacon

  1. Cook the pierogies according to package directions.
  2. Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 5 minutes.
  3. Transfer to a paper towel-lined plate; break into pieces when cool.
  4. Wipe out the skillet and heat the oil over medium heat.
  5. Add the onion and cook, covered, stirring occasionally, for 4 minutes.
  6. Add the cabbage, season with 1/4 teaspoon each salt and pepper, and cook, covered, stirring occasionally, until the vegetables are just tender, 2 to 3 minutes.
  7. Stir in the mustard, horseradish, and 1 tablespoon water and cook for 1 minute.
  8. Fold in the bacon and parsley and serve with the pierogies.
