Breakfast Fry-Up (21 Day Wonder Diet: Day 19)

  1. Preheat oven to 220C.
  2. Combine tomato and half the vinegar in small shallow baking dish.
  3. Roast, uncovered, about 10 minutes.
  4. Meanwhile, cook mushrooms, spinach and remaining vinegar in large frying pan until mushroom is tender and spinach wilts; stir in basil.
  5. Serve tomato and mushroom mixture on toast.
