Izakaya-Style Okara, Vegetable, Mayonnaise and Miso Salad

  1. Peel the carrots and slice thinly using a slicer (mandoline).
  2. Boil briefly in salted water and drain.
  3. Sprinkle the cucumber with salt and roll firmly on a cutting board.
  4. Wash under running water and wipe well, then finely julienne.
  5. Julienne the ham also.
  6. Mix the ingredients together.
  7. Add the fresh okara.
  8. Done!
