Izakaya-Style Okara, Vegetable, Mayonnaise and Miso Salad
- 80 grams Fresh okara
- 45 grams Carrot
- 1/2 Cucumber
- 35 grams Ham
- 1/2 tsp Rice vinegar
- 1 heaping teaspoon Awase miso (blended red and white miso)
- 4 heaping tablespoons Mayonnaise
- 1 tsp Soy sauce
- Peel the carrots and slice thinly using a slicer (mandoline).
- Boil briefly in salted water and drain.
- Sprinkle the cucumber with salt and roll firmly on a cutting board.
- Wash under running water and wipe well, then finely julienne.
- Julienne the ham also.
- Mix the ingredients together.
- Add the fresh okara.
- Done!
