Authentic Fried Rice Recipe

  1. CUT THE PORK INTO FINE DICE.
  2. Blanch the peas in a saucepan of boiling water for about 5 min if they are fresh or possibly 2 min if they are frzn.
  3. Drain them in a colander.
  4. Heat a wok or possibly large skillet till it is warm.
  5. Then add in the oil and wait till it is almost smoking.
  6. Add in the cooked rice and stir-fry it for 1 minute, and then add in the barbecued pork, peas and salt.
  7. Continue to stir-fry the mix for 5 min over high heat.
  8. Next add in the beaten Large eggs and bean sprouts and continue to stir-fry for 2 min or possibly till the Large eggs have set.
  9. Turn the mix onto a plate and garnish it with the scallions.
  10. Serve at once, or possibly let it cold and serve as a cool rice salad.
