Minted Trout Amandine

  1. In a small skillet, toast the sliced almonds until a golden brown.
  2. Set aside.
  3. In a large skillet, melt the butter over medium heat, then add garlic and saute for one minute.
  4. Add the lemon juice and mint.
  5. Cook and stir for one minute.
  6. Season the trout fillets with salt and pepper.
  7. Add the trout filets, skin side UP.
  8. Cook for three minutes, then turn.
  9. Cook, skin side down, until fish flakes easily.
  10. Serve and garnish with the toasted almonds.
