Chicken Luncheon Sandwich
- 123 cups chicken meat, cooked chopped
- 118 cups cheddar cheese shredded
- 9/16 cups celery finely chopped
- 1/4 cup green bell peppers
- 118 Green scallions, spring or green onions chopped
- 118 tablespoons pimentos chopped
- 9/16 cups mayonnaise
- 9/16 cups yogurt, plain
- 1 x salt to taste
- 1 x black pepper to taste
- 1 x bread
- 1 x lettuce
- Combine chicken, cheese, celery, bell pepper, onion, pimiento, mayonnaise and yogurt.
- Season with salt and pepper.
- Stir until well blended.
- Refrigerate until ready to use.
- Serve on rolls with lettuce.
- Makes about 5 cups.
