My unhumble Hummus
- 2 cups canned garbanzo beans, drained but liquid reserved
- 13 cup tahini (sesame seed paste...you'll find this in the ethnic section of most large grocery stores)
- 14 cup fresh lemon juice
- 1 teaspoon salt
- 14 teaspoon ground black pepper
- 1 teaspoon fresh minced parsley
- 2 garlic cloves, halved (if you like your hummus real garlicky, add a 3rd clove)
- 12 teaspoon cumin
- 14 teaspoon coriander
- 1 tablespoon extra-virgin olive oil
- paprika, for color
- pita bread
- Place the drained beans, tahini, lemon juice, salt, pepper, parsley, garlic, cumin, coriander, and olive oil into a blender or food processor and blend until smooth.
- Use a tablespoon or so of the reserved liquid from the beans to adjust thickness, if necessary.
- Transfer the mixture to a bowl and drizzle a little extra-virgin olive oil on top in the center of the hummus.
- Sprinkle lightly with the paprika.
- Serve with grilled pita bread toast points.
- This serves 15 to 20, as an appetizer.
