My unhumble Hummus

  1. Place the drained beans, tahini, lemon juice, salt, pepper, parsley, garlic, cumin, coriander, and olive oil into a blender or food processor and blend until smooth.
  2. Use a tablespoon or so of the reserved liquid from the beans to adjust thickness, if necessary.
  3. Transfer the mixture to a bowl and drizzle a little extra-virgin olive oil on top in the center of the hummus.
  4. Sprinkle lightly with the paprika.
  5. Serve with grilled pita bread toast points.
  6. This serves 15 to 20, as an appetizer.
