Wine And Wild Rice Casserole
- 1 (6 oz.) pkg. long grain and wild rice mix
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 2 Tbsp. butter or margarine
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- 1/2 c. dairy sour cream
- 1/3 c. dry white wine
- 1/2 tsp. curry powder
- 2 c. cubed cooked chicken or turkey
- 1/4 c. snipped parsley
- Prepare rice mix according to package directions on top of range.
- Meanwhile, place onion, celery and butter in a 2-quart glass casserole.
- Cook, covered in a countertop microwave oven until tender, 2 to 2 1/2 minutes.
- Blend in soup, sour cream, wine and curry.
- Stir in chicken and cooked rice.
- Microcook, covered, until heated through, 8 to 10 minutes, giving casserole a half turn after 5 minutes.
- Garnish with parsley.
