Okara Sweets - Okara Kabocha Muffins

  1. Steam or microwave the pumpkin and mash roughly.
  2. Preheat the oven to 180C.
  3. Mix the pumpkin and okara well.
  4. Beat the egg in a bowl, add the sugar, and then mix.
  5. Add Step 2 and the baking powder, then stir in.
  6. Fill the muffin cups using a spoon.
  7. Bake for 25-30 minutes at 180C.
  8. User "caramel-cookie" made the batter using a hand mixer.
  9. User "Sandy Sandy" made this with heavy cream.
  10. User "Uraran dx" made it with milk.
  11. They seem to go well with okara's moistness.
