Okara Sweets - Okara Kabocha Muffins
- 100 grams Fresh okara
- 100 grams Kabocha squash with rind
- 1 Egg
- 40 grams Sugar
- 1 tsp Baking powder
- Steam or microwave the pumpkin and mash roughly.
- Preheat the oven to 180C.
- Mix the pumpkin and okara well.
- Beat the egg in a bowl, add the sugar, and then mix.
- Add Step 2 and the baking powder, then stir in.
- Fill the muffin cups using a spoon.
- Bake for 25-30 minutes at 180C.
- User "caramel-cookie" made the batter using a hand mixer.
- User "Sandy Sandy" made this with heavy cream.
- User "Uraran dx" made it with milk.
- They seem to go well with okara's moistness.
