Quick and Crispy Quesadillas
- 8 whole Small Corn Tortillas
- 8 slices Cheese
- 8 Tablespoons Black Beans
- 8 Tablespoons Cooked Rice
- 1 cup Baby Spinach
- Lay four tortillas on your work surface to assemble quesadillas all at once.
- Place ingredients on the tortillas starting with one slice of cheese.
- Any kind will work, but I like colby or cheddar best.
- You can also use queso fresco if you have it.
- Next add to each quesadilla: 2 tablespoons beans, 2 tablespoons rice, a dash of spices (garlic powder, onion powder, chili powder all work well), and 1/4 cup spinach leaves.
- Top with a second slice of cheese and another tortilla.
- Head a cast iron skillet and spray with canola oil.
- Working with one quesadilla at a time, fry until crisp on both sides and cheese is melted.
- Serve with salsa, sour cream and/or guacamole.
