Tasty Island Chicken with fried cabbage, cornbread and rice

  1. Preheat oven to 375F.
  2. Wash and trim chicken of excess fat.
  3. Chop up garlic cloves.
  4. Cut bell peppers and onion.
  5. Place chicken into a baking pan.
  6. I place a few pieces of chopped garlic under the skin of chicken.
  7. Season chicken with salt, lemon pepper, curry powder, garlic powder, cayenne pepper.
  8. Rub crushed pineapple onto chicken.
  9. Add mandarins, reserve juice in can.
  10. Add 2 tablespoons soy sauce, and 2 tablespoons of balsamic vinegar.
  11. Pour syrup mixture on top of chicken.
  12. Place in oven for 40 minutes.
  13. Cut bacon into small pieces and place in skillet to fry.
  14. Add 3 cloves garlic chopped.
  15. Cut cabbage into thin strips add to bacon and garlic.
  16. I added a few strips of red bell pepper.
  17. Season to taste.
  18. Cook for 10 minutes or unto desired tenderness.
  19. I also prepared white rice.
  20. And 2 boxes of huffy.
