Turkey Sausage, Peppers And Onions Recipe
- 1 pkg. Italian turkey sausage
- 2 tbsp. extra virgin olive oil
- 2 c. thin onion wedges
- 2 med. peppers, cut in wedges
- 1 garlic clove, crushed
- 1 (8 ounce.) pkg. mushrooms, quartered
- 1 (14.5 ounce.) can whole peeled tomatoes with juice
- Halve sausage links crosswise, cover and simmer in 1/4 inch water in a large skillet 8 to 10 min.
- Uncover and cook till liquid is absorbed and sausages are browned.
- Transfer to a side dish.
- Heat oil in skillet, add in onions and peppers, saute/fry 2 min.
- Cover and cook over low heat, stirring occasionally for 10 min.
- Add in garlic and mushrooms, saute/fry 1 minute.
- Stir in tomatoes with juice and cooked sausage.
- Simmer uncovered, stirring to break up tomatoes till liquid cooks down; 10 min.
