Dynamite (Chili Spring Rolls)
- 1 kg ground beef
- 20 piece green chili
- 3 tbsp taco seasoning
- 1/2 head garlic, chopped
- 1 large white onion, diced
- 20 piece spring roll wrapper
- 1 cheddar cheese (sliced lenghtwise)
- 1 cup oil
- 1/2 cup water
- Wash chilies and pat dry.
- Slice one side of the chili and remove seeds (make sure to wear gloves).
- Set aside.
- Heat pan and add about 3 tablespoons of oil.
- Add garlic, cook until golden brown.
- Add onions until cooked.
- Set aside.
- Cook and brown beef.
- Mix taco seasoning and cooked garlic and onions.
- Turn heat off and let it cool a little.
- Prepare and lay 1 wrapper on a flat surface.
- Stuff 1 green chili with a teaspoon or tablespoon of cooked ground beef mixture and add a slice/cut cheese.
- Roll stuffed chili in wrapper and secure sides with a bit of water.
- Fry chili using remaining oil for 3-5 minutes or until wrapper is golden brown.
- Serve with chili sauce or dip.
