Big Breakfast Cookies
- 4 12 cups sifted flour
- 1 34 teaspoons salt
- 1 tablespoon baking soda
- 4 cups quick oats
- 1 14 cups sugar
- 1 12 cups raisins
- 1 teaspoon ground ginger
- 1 cup melted vegetable shortening
- 1 cup light molasses
- 2 eggs
- 14 cup hot water
- 1 cup finely chopped nuts
- Combine sugar, shortening, eggs, molasses, raisins and nuts.
- Add dry ingredients and hot water.
- Work the dough till it is well mixed.
- On a floured board roll out a portion of the dough to 1/4 inch thick.
- Cut with 3 1/2 inch cookie cutter.
- Place cookies on a lightly greased baking sheet.
- Brush each cookie with water and sprinkle with sugar.
- Bake in oven at 375 for 8 to 10 minutes.
