Fig, Bacon and Goat Cheese Pizza

  1. Preheat oven to 500 degrees F and heat up a pizza stone for 30 minutes.
  2. In a medium fry pan over medium heat, fry bacon until crispy.
  3. Gently pull pizza dough apart into a non-perfect circle.
  4. Place on a piece of parchment.
  5. Smear on a thick layer of goat cheese on the pizza doughs entire surface.
  6. Top with figs and bacon.
  7. Place on the stone (with parchment) in the oven.
  8. Bake for 10-15 minutes, or until crust is golden brown.
  9. While pizza is cooking, add balsamic vinegar and honey to a small saucepan.
  10. Cook to reduce for 3-5 minutes, or until thick and syrupy.
  11. Remove pizza from the oven and top with a handful of arugula and balsamic/honey reduction sauce.
