Country Cheese Soup

  1. Cook vegetables in butter in large saucepan on medium heat until tender, stirring frequently.
  2. Add flour and seasonings; mix well.
  3. Cook 2 minutes or until bubbly, stirring frequently.
  4. Gradually add milk, stirring until well blended.
  5. Cook until mixture boils and thickens, stirring constantly.
  6. Reduce heat to low; simmer 5 minutes.
  7. Add cheese; cook until cheese is melted and mixture is heated through, stirring constantly.
  8. Do not boil.
