Country Cheese Soup
- 1/3 cup shredded carrot
- 1/3 cup thinly sliced celery
- 2 Tbsp. finely chopped green pepper
- 2 Tbsp. finely chopped onion
- 1/4 cup (1/2 stick) butter or margarine
- 1/3 cup flour
- 1 tsp. salt
- dash black pepper
- 5 cups milk
- 1 pkg. (8 oz.) CRACKER BARREL Sharp Cheddar Cheese, shredded (2 cups)
- Cook vegetables in butter in large saucepan on medium heat until tender, stirring frequently.
- Add flour and seasonings; mix well.
- Cook 2 minutes or until bubbly, stirring frequently.
- Gradually add milk, stirring until well blended.
- Cook until mixture boils and thickens, stirring constantly.
- Reduce heat to low; simmer 5 minutes.
- Add cheese; cook until cheese is melted and mixture is heated through, stirring constantly.
- Do not boil.
